FRIDAY, DEC 11th, 6-10PM, WICKER PARK.
Say hello to the 14th addition to Founders Brewing Company‘s popular Backstage Series: Project PAM. In development under a shroud of secrecy for years, Project PAM is a Black IPA brewed with an abundance of hops including, Chinook, Nugget, Centennial, Amarillo, El Dorado and Mosaic. It’s balanced with Crystal and Midnight Wheat malts and finally Aged in Maple Syrup Bourbon Barrels to add complex oaky bourbon notes and the sweetness of maple syrup. Project PAM clocks in at 10.8% ABV.
As for the origins of Project PAM’s name, it will forever remain a bit of a mystery – but, we will share that it’s a nod to the cellar coding system used by Jason Heystek, the head of our barrel-aging program and star of the dark and brooding label that adorns its bottle.

Collaborating with our friends at Baker’s Tale and Scooters Custard, we’ve launched a new dessert menu yesterday. We’ll be changing it up monthly, but this one features carrot cake, ginger-pumpkin custard ice cream sandwiches, maple pecan pie, and our usual darn good brownies and toll house bars. Continuing on our evolution to a sleeker menu, but lots of dramatic stuff for November. (We’re easily impressed.) Butternut squash soup, Nola gumbo, a cool calamari combo, the Thanksgiving sandwich, shishito peppers (jumping on the train here), Stiglmeier theuringer sausage, smoked shiitake mushrooms, fried shiitake mushroom po boy (kind of a veggie oyster po boy), more fried onions, and pumpkin custard, among other things. As you may have noticed, we are updating (mildly) our menu monthly. New this month is:
- Hot spiced cider
- Ruby red trout is the featured fish (fried, blackened, smoked including a yummy smoked trout salad)
- Revamped house pickled veggie side, now to include banana peppers, so the complete dish is cuke, okra, banana pepper & red onion
- Two German sausages for Oktoberfest, from the great, local Stiglmeier sausage house – weisswurst and theuringer
- Antibiotic, hormone, and cage free chicken
- Korean fried chicken permanently added (named Sandra O)
- Revamped cheesesteak (renamed Joey V) and the turkey reuben (renamed Cerise R) to make them a little more interesting
As always, we will make you any old sandwich, or any sandwich you can describe for that matter, upon request. Just you, though. Don’t tell anyone else.

As a part of our ongoing quest to move towards healthier ingredients, our chicken is now hormone, antibiotic, and cage free. Not only that, but it tastes better, like how some of us (no names named) remember chicken used to taste.
